Wugong Dried Noodles

his photo was taken at the Wugong Riverbank Fair, a gathering with over 4,000 years of history, formed to commemorate Hou Ji, the ancestor of agriculture. The picture shows one of the commodities exchanged at the fair—dried noodles. The slender, moist noodles are hung on rods, sagging under gravity's pull. As the suspended noodles are exposed to air, their internal moisture gradually evaporates, increasing their firmness and resulting in stable, dried, and easily preservable strand-like noodles.
